A giant, soft and doughy bakery-style chocolate chip cookie for one. Best enjoyed warm from your kitchen oven at home. Only six ingredients needed and made in under 20 minutes.
This cookie is truly indulgent, it is perfect for those times you are craving warm homemade cookie. Also perfect for when you don’t want to bake a whole batch of cookies or be tempted to devour a whole batch of cookies!
What you’ll need to make this Chocolate Chip Cookie For One:
- Small mixing bowl.
- Kitchen scales (to measure out butter).
- Microwave to melt the butter. Softened butter will also work, however it is easier to mix the ingredients together when the butter is melted.
- Oven.
- Baking paper.
- Optional: cooling rack.
Ingredients:
- Melted butter: this can be salted or unsalted (personally I prefer unsalted as it’s a healthier option).
- Self-raising flour: Alternatively, you could substitute for plain (all-purpose) flour and baking powder. I have not personally tried this, but the equivalent measurements would be 2 tablespoons of plain (all-purpose) flour and ¼ teaspoon baking powder.
- Sugars: both brown and white sugar are included in this recipe to give the cookie a chewy and crispy texture. Both sugars bring out hints of butterscotch and vanilla also.
- Nut butter: almond butter or peanut butter will work. This will help the cookie keep a thick round shape and not spread out too thin while cooking. This is also a substitute for egg as this single-serve recipe would require less than a whole egg, making the recipe too tedious (in my opinion). The resulting flavour of the cookie is not overly nutty either.
- Chocolate chips: no explanation needed ;).
Instructions:
- Preheat oven to 180 celsius or 160 celsius fan-force. Line a baking tray with baking paper or grease with an oil spray/butter.
- Measure out the butter on using kitchen scales. Then, place in the microwave for 10 seconds. Stir with a spoon, if still not melted, place in the microwave for another 10 seconds.
- Add the melted butter and all other ingredients to a small bowl and mix together.
- Add the chocolate chips and mix in. The mixture will be somewhat thick so you may want to use your hands to mix these in.
- Roll the mixture into a ball with your hands and then flatten slightly so it looks like a patty.
- Place on a lined/greased baking tray and bake for 15 minutes or until the edges are golden brown
Preparation tips
I have used Australian measuring spoons, with 1 tablespoon equating to 20 mL and 1 teaspoon equating to 5 mL.
The cookie may be quite soft just after being removed from the oven. Therefore, let it sit for 5-10 minutes out of the oven, where it will finish cooking on the tray and then cool and “firm up”.

- 1 teaspoon white sugar
- 3 teaspoons nut butter (to replace the absence of egg)
- 2 tablespoons of chocolate chips

- Preheat oven to 180 celsius or 160 celsius fan-force. Line a baking tray with baking paper or grease with an oil spray/butter.
- Add all ingredients to a bowl except the chocolate chips and mix together until mostly combined.
- Add in the chocolate chips and mix. The mixture will be somewhat thick so you may want to use your hands to mix these in.
- Once all the ingredients are combined, form the mixture into a ball and flatten slightly so it looks like a patty.
- Cook in the oven for 15 minutes or until the edges are golden brown.
- Once cooked, remove from the oven and let the cookie sit for 5-10 minutes ( if you can wait that long!). The cookie will finish cooking on the tray, cool and “firm up”.
